Description

A light and refreshing cucumber shrimp salad that combines tender shrimp with cool, crisp cucumbers and a creamy dressing.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cucumbers, diced
  • 3 green onions, sliced
  • 1/4 cup fresh herbs (like cilantro or parsley), chopped
  • 1/2 cup Greek yogurt or sour cream
  • 2 tablespoons lime juice
  • Salt and pepper to taste


Instructions

  1. Cook the shrimp in boiling water for 2-3 minutes or until they turn pink. Drain and let cool.
  2. Combine the cooked shrimp, cucumbers, green onions, and herbs in a large bowl.
  3. Whisk together the Greek yogurt (or sour cream), lime juice, salt, and pepper in a separate bowl to create the dressing.
  4. Pour the dressing over the shrimp and cucumber mixture and toss gently to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a twist, try adding avocado or bell peppers. Adjust lime juice to taste for acidity.
