A light and refreshing cucumber shrimp salad that combines tender shrimp with cool, crisp cucumbers and a creamy dressing.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 cucumbers, diced
- 3 green onions, sliced
- 1/4 cup fresh herbs (like cilantro or parsley), chopped
- 1/2 cup Greek yogurt or sour cream
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling water for 2-3 minutes or until they turn pink. Drain and let cool.
- Combine the cooked shrimp, cucumbers, green onions, and herbs in a large bowl.
- Whisk together the Greek yogurt (or sour cream), lime juice, salt, and pepper in a separate bowl to create the dressing.
- Pour the dressing over the shrimp and cucumber mixture and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
For a twist, try adding avocado or bell peppers. Adjust lime juice to taste for acidity.
