Description
A refreshing Cucumber Crab Salad combining crunchy cucumbers and tender crab meat, perfect for summer picnics and gatherings.
Ingredients
- 2 Cucumbers
- 1 cup Crab meat (fresh or canned)
- 1/4 Red onion (thinly sliced)
- 1 cup Cherry tomatoes (halved)
- 1 tbsp Rice vinegar
- 1 tbsp Lime juice
- 2 tbsp Fresh parsley or dill (chopped)
- 2 tbsp Olive oil
- Salt (for taste)
- Pepper (for taste)
Instructions
- Wash the cucumbers thoroughly under running water. If desired, peel the cucumber skin.
- Slice the cucumbers into thin, even pieces.
- If using real crab meat, extract it carefully from the shell and chop it into bite-sized pieces. For imitation crab, break it into smaller chunks.
- In a large bowl, combine the cucumber slices and crab meat.
- Add the sliced red onion and halved cherry tomatoes to the bowl.
- Pour in the rice vinegar and lime juice, then add the chopped fresh herbs.
- Drizzle in the olive oil, then sprinkle with salt and pepper to taste.
- Gently toss the ingredients together.
- Serve immediately or refrigerate for a chilled version.
Notes
For extra flavor, let the salad rest for about 10 minutes before serving. Adjust lime juice and vinegar according to taste.
