Description

A refreshing Cucumber Crab Salad combining crunchy cucumbers and tender crab meat, perfect for summer picnics and gatherings.


Ingredients

  • 2 Cucumbers
  • 1 cup Crab meat (fresh or canned)
  • 1/4 Red onion (thinly sliced)
  • 1 cup Cherry tomatoes (halved)
  • 1 tbsp Rice vinegar
  • 1 tbsp Lime juice
  • 2 tbsp Fresh parsley or dill (chopped)
  • 2 tbsp Olive oil
  • Salt (for taste)
  • Pepper (for taste)


Instructions

  1. Wash the cucumbers thoroughly under running water. If desired, peel the cucumber skin.
  2. Slice the cucumbers into thin, even pieces.
  3. If using real crab meat, extract it carefully from the shell and chop it into bite-sized pieces. For imitation crab, break it into smaller chunks.
  4. In a large bowl, combine the cucumber slices and crab meat.
  5. Add the sliced red onion and halved cherry tomatoes to the bowl.
  6. Pour in the rice vinegar and lime juice, then add the chopped fresh herbs.
  7. Drizzle in the olive oil, then sprinkle with salt and pepper to taste.
  8. Gently toss the ingredients together.
  9. Serve immediately or refrigerate for a chilled version.

Notes

For extra flavor, let the salad rest for about 10 minutes before serving. Adjust lime juice and vinegar according to taste.
