Ingredients
- 4 eggs
- 1 cup of cottage cheese
- 1 cup of fresh or frozen spinach
- 1/2 cup of milk
- 1/2 cup of shredded cheese (cheddar or mozzarella)
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- 1/4 teaspoon of nutmeg (optional)
- 1 chopped onion (optional)
- 1 tablespoon of olive oil (for cooking onions)
Instructions
- Preheat the oven to 180°C (350°F).
- Sauté chopped onions in olive oil until tender.
- In a mixing bowl, beat the eggs and combine with cottage cheese, milk, spinach, shredded cheese, salt, pepper, and nutmeg.
- Stir in the sautéed onions.
- Pour the mixture into a greased baking dish.
- Bake for 30 to 35 minutes until puffed and golden.
- Cool slightly before slicing and serving.
