Description

A delightful crustless quiche featuring creamy cottage cheese and fresh spinach, perfect for a nutritious meal any time of the day.


Ingredients

  • 4 eggs
  • 1 cup of cottage cheese
  • 1 cup of fresh or frozen spinach
  • 1/2 cup of milk
  • 1/2 cup of shredded cheese (cheddar or mozzarella)
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/4 teaspoon of nutmeg (optional)
  • 1 chopped onion (optional)
  • 1 tablespoon of olive oil (for cooking onions)


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Sauté chopped onions in olive oil until tender.
  3. In a mixing bowl, beat the eggs and combine with cottage cheese, milk, spinach, shredded cheese, salt, pepper, and nutmeg.
  4. Stir in the sautéed onions.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30 to 35 minutes until puffed and golden.
  7. Cool slightly before slicing and serving.
