Ingredients
- 454 g carrots, peeled and cut into uniform 5 cm pieces
- 120 g grated cheese
- 2 tbsp (30 ml) olive oil
- 1 tsp (5 ml) garlic powder
- 1/2 tsp (2.5 ml) salt
- 1/2 tsp (2.5 ml) coarse ground pepper
Instructions
- Place the carrot pieces in a medium saucepan, cover them with water, and set the pan over medium-high heat. Bring the water to a rolling boil. Let the carrots cook in the boiling water for roughly 10 minutes, or until they can be easily pierced with a fork.
- Once cooked, drain the water from the carrots and let them cool down a bit.
- While they cool, set your oven to preheat at 425°F and prepare a baking tray by lining it with parchment paper.
- Mix the slightly cooled carrots in a medium bowl with the grated cheese, olive oil, garlic powder, salt, and pepper. Ensure that everything is evenly coated.
- Place the carrot mixture onto the prepared baking sheet, ensuring they are spread out evenly and not touching each other. Use a flat-bottomed glass or jar to press down and flatten each carrot piece.
- Put the tray in the preheated oven and bake for 20 minutes. Take them out, flip each piece, and continue baking for another 15-20 minutes until they’re crispy and starting to caramelize.
- Take them out of the oven, and if you like, sprinkle them with flake salt and more grated cheese.
