Ingredients

  • 454 g carrots, peeled and cut into uniform 5 cm pieces
  • 120 g grated cheese
  • 2 tbsp (30 ml) olive oil
  • 1 tsp (5 ml) garlic powder
  • 1/2 tsp (2.5 ml) salt
  • 1/2 tsp (2.5 ml) coarse ground pepper


Instructions

  1. Place the carrot pieces in a medium saucepan, cover them with water, and set the pan over medium-high heat. Bring the water to a rolling boil. Let the carrots cook in the boiling water for roughly 10 minutes, or until they can be easily pierced with a fork.
  2. Once cooked, drain the water from the carrots and let them cool down a bit.
  3. While they cool, set your oven to preheat at 425°F and prepare a baking tray by lining it with parchment paper.
  4. Mix the slightly cooled carrots in a medium bowl with the grated cheese, olive oil, garlic powder, salt, and pepper. Ensure that everything is evenly coated.
  5. Place the carrot mixture onto the prepared baking sheet, ensuring they are spread out evenly and not touching each other. Use a flat-bottomed glass or jar to press down and flatten each carrot piece.
  6. Put the tray in the preheated oven and bake for 20 minutes. Take them out, flip each piece, and continue baking for another 15-20 minutes until they’re crispy and starting to caramelize.
  7. Take them out of the oven, and if you like, sprinkle them with flake salt and more grated cheese.
