Description
Delight in crispy shrimp tacos with sautéed bell peppers and onions, topped with cheese and served with your favorite condiments.
Ingredients
- 1 lb shrimp, tails and shells removed
- 2 bell peppers, thinly sliced
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 2 tbsp taco seasoning
- 8-10 corn tortillas
- 1 cup shredded cheese (Monterey Jack or cheddar)
- 1 tbsp olive oil
- Guacamole, sour cream, and salsa for serving
Instructions
- Preheat your oven to 425°F.
- In a large pan, sauté onion and bell peppers with olive oil over medium heat for approximately 10 minutes until caramelized.
- Add minced garlic, taco seasoning, and a pinch of salt. Stir and cook for an additional minute.
- Toss in the shrimp and cook for about 5 minutes until pink and opaque.
- Warm the tortillas in the microwave for 30 seconds until pliable. Brush the outside of each with olive oil.
- Fill each tortilla with approximately four shrimp and some onion and pepper filling. Adjust cheese according to preference.
- Place the tacos on a baking sheet, cover them with a smaller baking sheet to press them together, and bake for 10 minutes.
- Remove the smaller baking sheet and bake for an additional 10 minutes until crispy and golden brown.
Notes
Ensure tortillas are fresh for maximum crispiness. Experiment with toppings to enhance flavors.
