Ingredients

  • Fresh sushi-grade salmon
  • Yuzu kosho
  • Yuzu juice
  • Seasoned sushi rice
  • Soy sauce (for serving)
  • Scallions (for garnish)


Instructions

  1. Prepare the sushi rice as directed on the package, seasoning it with rice vinegar, sugar, and salt. Let it cool before molding.
  2. Slice the sushi-grade salmon into small, bite-sized pieces.
  3. Mix yuzu kosho and yuzu juice in a bowl for the sauce.
  4. Shape the cooled rice into small rectangles or squares.
  5. Heat oil in a skillet over medium heat and fry the rice bites until golden and crispy on both sides.
  6. Top each crispy rice piece with a slice of salmon.
  7. Drizzle with the yuzu mixture and garnish with scallions.
  8. Serve with soy sauce on the side for dipping.

Notes
