Ingredients
- – 1.5 lb (750 g) baby potatoes, halved (about 1.75″ / 3.5 cm, 20 – 24 potatoes)
- – 2 tbsp (30 ml) olive oil, plus more for drizzling
- – 1/2 cup (50 g) grated cheddar cheese, the sand-like type (Note 1)
- – 1/2 tsp (2.5 ml) garlic powder (or sub with onion powder)
- – 1/2 tsp (2.5 ml) dried oregano or thyme
- – 1/2 tsp (2.5 ml) paprika
- – 1/4 tsp (1.25 ml) salt (I use table salt, leave out to lower sodium)
- – 1/2 tsp (2.5 ml) black pepper
- – 3/4 cup (180 ml) plain yogurt, or a combination of both
- – 1/4 cup (60 ml) finely chopped green onions/scallions, plus more for garnish (or chives)
Instructions
- Set your oven to heat up to 200°C/400°F (or 180°C if using a fan-forced oven).
- In a bowl, combine the grated cheddar cheese, garlic powder, oregano or thyme, paprika, salt, and black pepper.
- Pour olive oil into a 22 x 33 cm (9 x 13 inches) glass baking dish and tilt to coat the entire base with oil evenly.
- Evenly distribute the cheese mixture across the bottom of the dish. Avoid touching or spreading it after sprinkling.
- Arrange the halved baby potatoes, cut side facing down, pressing them firmly onto the cheese mixture.
- Optional: Lightly drizzle or spray the top of the potatoes with olive oil and sprinkle with a little salt.
- Cook the potatoes in the oven for 35 to 40 minutes, or until they are tender and the cheese coating is a rich golden color (you can see through the glass dish!).
- Let the dish sit for 5 minutes. Then, use a spatula to slice through the cheese crust between every few potatoes, lifting and turning them over onto a serving plate so the cheese side faces up.
- Serve with plain yogurt as a dipping sauce, if desired, and garnish with additional chopped green onions. Enjoy as a side dish or appetizer!
