Description

A flavorful and crunchy twist on cod fillets, featuring a savory Parmesan crust, perfect for busy weeknights or cozy family dinners.


Ingredients

  • 4 fresh cod fillets (about 6 oz each)
  • 1 cup Parmesan cheese (finely grated)
  • ½ cup panko breadcrumbs (or almond flour for a low-carb option)
  • 2 large eggs (beaten)
  • 1 tsp garlic powder
  • ½ tsp paprika
  • Salt and freshly cracked pepper (to taste)
  • 2 tbsp olive oil or melted butter
  • Fresh parsley (chopped, for garnish)
  • 1 lemon (cut into wedges for serving)


Instructions

  1. Preheat your oven to 400°F (200°C) or heat olive oil in a skillet.
  2. Pat dry the cod fillets.
  3. Create a dredging station: one bowl with beaten eggs and another with a mix of Parmesan cheese, panko, garlic powder, paprika, salt, and pepper.
  4. Dip each cod fillet in the eggs, then coat with the Parmesan mixture.
  5. For baking, place the coated fillets on a parchment-lined baking sheet, drizzle with olive oil/butter, and bake for 12-15 minutes until golden. For pan-frying, cook in the skillet over medium heat for 3-4 minutes per side until crispy.
  6. Garnish with parsley and serve with lemon wedges.

Notes

Allow the cod to sit at room temperature for about 15–20 minutes before cooking for even cooking. Use a non-stick skillet for pan-frying, or cast iron for a perfect sear.
