A flavorful and crunchy twist on cod fillets, featuring a savory Parmesan crust, perfect for busy weeknights or cozy family dinners.
Ingredients
- 4 fresh cod fillets (about 6 oz each)
- 1 cup Parmesan cheese (finely grated)
- ½ cup panko breadcrumbs (or almond flour for a low-carb option)
- 2 large eggs (beaten)
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and freshly cracked pepper (to taste)
- 2 tbsp olive oil or melted butter
- Fresh parsley (chopped, for garnish)
- 1 lemon (cut into wedges for serving)
Instructions
- Preheat your oven to 400°F (200°C) or heat olive oil in a skillet.
- Pat dry the cod fillets.
- Create a dredging station: one bowl with beaten eggs and another with a mix of Parmesan cheese, panko, garlic powder, paprika, salt, and pepper.
- Dip each cod fillet in the eggs, then coat with the Parmesan mixture.
- For baking, place the coated fillets on a parchment-lined baking sheet, drizzle with olive oil/butter, and bake for 12-15 minutes until golden. For pan-frying, cook in the skillet over medium heat for 3-4 minutes per side until crispy.
- Garnish with parsley and serve with lemon wedges.
Notes
Allow the cod to sit at room temperature for about 15–20 minutes before cooking for even cooking. Use a non-stick skillet for pan-frying, or cast iron for a perfect sear.
