Ingredients

  • 2 pounds (900g) sweet potatoes
  • 3 tablespoons (45ml) vegetable oil
  • 1 1/2 teaspoons kosher salt
  • 1 to 2 tablespoons spice or spice combination of your choice: chipotle powder, smoked paprika, Chinese five-spice, pumpkin pie spice, garam masala, Cajun seasoning, etc.


Instructions

  1. Heat the oven to 450°F, or for extra crispiness, set it to 500°F. Place a sturdy baking sheet or roasting pan in the oven to heat up.
  2. Remove the skin from the sweet potatoes and trim the ends. Slice each potato in half lengthwise, then, if very long, cut in half crosswise. Cut each piece into wedges about 1/4 to 1/2 inch thick, or slice into disks with a mandoline or sharp knife.
  3. In a large bowl, combine the sweet potato slices with oil. Mix thoroughly. Sprinkle in salt and your chosen spices, using your hands to ensure even coating.
  4. Once the baking sheet is hot, carefully arrange the sweet potato pieces in a single layer on it. Be cautious as the pan is very hot.
  5. Cook in the oven for 15 to 25 minutes. After 10 minutes, take the baking sheet out and turn each piece over with tongs. Return to the oven for an additional 5 to 15 minutes, until they are nicely browned. The cooking time will vary based on oven temperature and the size of the wedges. The darker they become, the crisper they will be, but be careful not to let them burn. The natural sugars will caramelize, enhancing the flavor even if they get quite dark.
