Description

Delight in the flavors of crispy salmon fillets glazed with orange juice, served over fluffy rice and colorful mixed vegetables for a nutritious and satisfying meal.

Ingredients

  • 4 Salmon fillets
  • 1/4 cup orange juice
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Pepper, to taste
  • 2 cups cooked rice
  • 2 cups mixed vegetables (such as broccoli, bell peppers, and carrots)
  • 2 tablespoons olive oil

Instructions

  1. Mix the orange juice, brown sugar, garlic powder, salt, and pepper to create a marinade.
  2. Marinate the salmon fillets for at least 15 minutes.
  3. Heat olive oil in a pan over medium heat.
  4. Remove salmon from marinade and pan-fry for about 4-5 minutes per side until crispy and cooked through.
  5. Steam or stir-fry mixed vegetables until tender in another pot.
  6. Serve the salmon over cooked rice, topped with the veggies and any remaining marinade if desired.

Notes

For extra crispy edges, let the salmon rest for a minute or two after cooking. Experiment with the marination time to enhance flavors.
