Ingredients
- 4 large boneless skinless chicken breasts, cut in half to make 8
- 355 ml (1 1/2 cups) mayonnaise
- 5 ml (1/2 tsp) salt
- 5 ml (1/2 tsp) ground black pepper
- 355 ml (1 1/2 cups) freshly grated vegetarian cheese
- Chopped parsley, or basil for garnish
- Salt and pepper, if you feel you need more
Instructions
- Set your oven to 375°F to preheat.
- In a small bowl, blend the mayonnaise with the salt and pepper. Mix thoroughly.
- In a separate bowl, place the grated vegetarian cheese.
- Line a baking tray with parchment paper.
- Coat each piece of chicken in the mayonnaise mixture on both sides, then roll it in the cheese. Arrange the coated chicken on the baking tray. Season again with a bit more salt and pepper if desired.
- Place in the oven and bake for 35 minutes, ensuring the chicken reaches an internal temperature of 165°F.
