Ingredients

  • – 1.5 kg (3.3 pounds) gold baby potatoes, washed and halved
  • – 30 ml (2 tbsp) olive oil
  • – 14 g (1 tbsp) unsalted butter, melted
  • – 3 fresh garlic cloves, minced
  • – 5 ml (1 tsp) fresh thyme leaves, roughly chopped
  • – 2.5 ml (1/2 tsp) sea salt
  • – 1.25 ml (1/4 tsp) ground black pepper
  • – juice of half a lemon
  • – 10 ml (2 tsp) chopped fresh parsley (or some dried parsley)


Instructions

  1. Place the potatoes in a mixing bowl and add the olive oil, butter, garlic, thyme, salt, and pepper. Stir everything together, ensuring the potatoes are evenly covered.
  2. Optionally, line the air fryer basket with aluminum foil to simplify cleaning afterward. Arrange the potatoes in the air fryer.
  3. Set the air fryer to a temperature of 400°F (200°C).
  4. Cook the potatoes for 12-15 minutes or until they are easily pierced with a fork. Shake the basket midway through the cooking process.
  5. When cooking is complete, drizzle the lemon juice over the potatoes and sprinkle with chopped fresh parsley, then toss or stir to combine.
