Description
Delightful crispy ground beef tacos that combine savory seasoned beef with melted cheese, wrapped in perfectly fried tortillas.
Ingredients
- 1 pound 90/10 ground beef
- 1/2 medium onion, finely chopped
- 2 tablespoons taco seasoning
- 2 tablespoons tomato paste
- 1/4 cup water or beef broth as needed
- Salt to taste
- 8 (6 inch) taco size flour tortillas
- 2 to 3 cups mozzarella cheese, shredded
- Avocado or vegetable oil
- Fresh cilantro, finely chopped for garnish
Instructions
- Heat about 1 tablespoon of oil in a large skillet over medium heat.
- Add the chopped onions and cook until softened, about 2-3 minutes.
- Introduce the ground beef into the skillet. Use a large spoon to break it up and cook until browned, about 4-5 minutes.
- Mix in the tomato paste and taco seasoning. Stir in water or beef broth if the mixture appears dry, continuing to cook until the beef is fully cooked and most liquid evaporates, about 3-4 minutes.
- Taste the filling and adjust salt if needed. Remove from heat, allowing it to cool slightly.
- On a clean surface, lay down a tortilla. Add about 1 1/2 to 2 tablespoons of cheese on the top half.
- Spoon a portion of the beef filling over the cheese and add another layer of cheese on top.
- Fold the bottom half of the tortilla over the filling and press down gently to seal.
- Place the assembled tacos on a large baking sheet and repeat with the remaining ingredients.
- Heat 3-4 tablespoons of oil in the skillet over medium heat. Fry the tacos in batches, about 1 minute per side, until they’re golden brown and crispy.
- Transfer to a wire cooling rack set over a baking sheet. Add more oil if necessary for subsequent batches.
- Garnish with finely chopped fresh cilantro before serving.
Notes
Avoid overfilling the tortillas to prevent sogginess. Adjust seasonings to taste before assembly.
