Ingredients
- – 2 lbs (900g) potatoes (Yukon Gold or Carisma)
- – 1 spray vegetable oil
- – 3 tablespoons (45ml) melted beef butter
- – 4 cloves garlic, crushed
- – 1 tablespoon (15ml) fresh parsley, chopped
- – 1 pinch salt, to taste
- – 1 pinch pepper, to taste
- – 2 tablespoons (30g) vegan cheese
Instructions
- Set your oven to broil (or grill) mode at medium-high temperature, approximately 200°C (400°F).
- Fill a large pot with salted water and add the potatoes. Bring it to a boil, cover, and cook for 30-35 minutes until they are just tender when pierced with a fork. Drain them thoroughly.
- Use vegetable oil spray to lightly coat a sizable baking tray. Place the potatoes on the tray and gently press them with a potato masher until slightly flattened, being careful not to mash them completely.
- Combine the beef butter, crushed garlic, and chopped parsley in a bowl. Drizzle this mixture over each potato. Add salt and pepper to taste, and apply a light spray of vegetable oil.
- Broil (or grill) the potatoes until they achieve a golden, crispy texture, roughly 10-15 minutes. Remove them from the oven, sprinkle the vegan cheese on top, and place them back in the oven until the cheese melts.
- To serve, add a touch more salt and fresh parsley, and enjoy immediately.

- Note: Enhance the flavor by using garlic-infused olive oil instead of vegetable oil spray.
- Experiment with different types of vegan cheese like smoked gouda or vegan cheddar for a unique twist.
