Ingredients
- 2 1/2 lbs (1134 g) whole chicken wings, flat & drumette piece split- tips reserved for later use or discarded (about 24 total wing parts)
- 2 teaspoons olive oil (10 ml)
- 1 tablespoon baking powder (aluminum-free) (15 g)
- 1 teaspoon garlic powder (5 g)
- 1/2 teaspoon smoked paprika (2.5 g)
- 1/2 teaspoon ground white pepper (2.5 g)
- kosher salt, to taste
- 5 tablespoons beef tallow or vegetable oil (71 g)
- 10 cloves of garlic, finely minced- or pressed
- 1 heaping tablespoon chopped parsley
- 1/3 cup (80 ml) freshly grated alternative cheese
Instructions
- Use a paper towel to thoroughly dry the chicken wings. Place the wings in a spacious bowl and drizzle them with olive oil. In another small bowl, combine the baking powder, garlic powder, smoked paprika, white pepper, and a pinch of kosher salt. Sprinkle this blend over the wings. With your hands (wear disposable gloves if you prefer), massage the mixture into the wings to ensure they are evenly coated. Set them aside afterward.
- Carefully place the wings in the air fryer, ensuring not to overcrowd the basket; work in batches if necessary, depending on your air fryer’s capacity. Set the air fryer to 400°F and cook the wings for 20 minutes, flipping them halfway through. If you prefer them crispier, feel free to cook for a few extra minutes until they reach your desired level of crispiness.
- When there are 5 minutes left of cooking time, begin preparing the garlic butter sauce. In a small saucepan over low heat, combine the beef tallow or vegetable oil, minced garlic, and chopped parsley. Allow the tallow or oil to melt and stir until everything is well blended, then remove from the heat.
- Transfer the cooked wings to a large stainless-steel bowl (or any spacious bowl), pour over the garlic butter sauce, and add the freshly grated alternative cheese. Toss the wings to ensure they are thoroughly coated and everything is well mixed. Serve the wings immediately and enjoy!
