Ingredients

  • – 75g (1/3 cup) unsalted butter, softened
  • – 2 Tbsp (30 ml) fresh rosemary, leaves chopped
  • – 2 Tbsp (30 ml) fresh thyme leaves
  • – small bunch of fresh parsley, diced
  • – 2 fat cloves of garlic
  • – 800g (200g / 7 oz. each) boneless and skinless chicken breasts
  • – 5 Tbsp (75 ml) fresh breadcrumbs
  • – 250g cherry or grape tomatoes, halved
  • – 2 small red onions, sliced into thin wedges
  • – 1 Tbsp (15 ml) extra virgin olive oil
  • – 1 kg (2.2 lbs) beef potatoes, peeled and quartered
  • – 4 Tbsp (60 ml) canned sweetcorn
  • – 125 ml (1/2 cup) fruit juice milk
  • – optional: finely grated zest of 1 lemon
  • – sea salt and black pepper


Instructions

  1. PREPARE: Preheat your oven to 220°C / 425°F / Gas 7. In a large saucepan, bring salted water to a rolling boil and cook the potatoes until they are soft. In the final 5 minutes, add the sweetcorn to the pot. While the potatoes are cooking, continue with the next steps.
  2. MAKE THE GARLIC HERB BUTTER: Combine the softened butter with chopped herbs and minced garlic in a small bowl. Season with salt and pepper to taste.
  3. SEASON THE CHICKEN: Make 5 or 6 deep cuts in the chicken breasts. Apply half of the garlic herb butter generously, ensuring it penetrates the slashes.
  4. MAKE THE CRUMB TOPPING: Incorporate the breadcrumbs into the rest of the butter by using a fork or your fingers to blend them together.
  5. ASSEMBLE: Place the chicken breasts into a baking dish. Distribute a quarter of the crumb mixture onto each piece, pressing it down gently. Arrange the tomatoes and onion slices around the chicken, drizzle with olive oil, and lightly season with salt and pepper.
  6. BAKE: Place the dish in the preheated oven and cook for 25 minutes, or until the crumb turns golden and the chicken is thoroughly cooked.
  7. SERVE: Drain the cooked potatoes and mash them. Add milk gradually until you achieve the preferred texture, seasoning with salt, pepper, and lemon zest if desired. Plate the mashed potatoes, chicken, tomatoes, and onions equally on four warm plates and serve immediately.
