Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 lb fresh fish fillets (cod or tilapia)
  • Oil for frying (vegetable or canola)


Instructions

  1. Pat the fish fillets dry with paper towels to eliminate excess moisture.
  2. In a bowl, mix the all-purpose flour, cornstarch, salt, and pepper together until combined.
  3. In another bowl, whisk the eggs until frothy.
  4. Place panko breadcrumbs in a third bowl.
