- 1 cup all-purpose flour
- 1/2 cup cornstarch

- 2 large eggs
- 1 cup panko breadcrumbs
- 1 lb fresh fish fillets (cod or tilapia)

Instructions
- Pat the fish fillets dry with paper towels to eliminate excess moisture.
- In a bowl, mix the all-purpose flour, cornstarch, salt, and pepper together until combined.
- In another bowl, whisk the eggs until frothy.
- Place panko breadcrumbs in a third bowl.
- Dip each fillet into the flour mixture, then into the egg wash, and finally into the panko breadcrumbs.
