Ingredients
- 1.5 lbs of white fish fillets (cod, haddock, tilapia, or swai)
- 1/2 cup of panko breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of fresh lemon juice
- 2 tablespoons of olive oil
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of dried Italian herbs
- 1 teaspoon of garlic powder
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- Lemon slices for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it with olive oil.
- In a medium-sized bowl, mix panko breadcrumbs, grated Parmesan cheese, chopped fresh parsley, dried Italian herbs, garlic powder, salt, and black pepper.
- Rinse fish fillets under cold water and pat dry with paper towels. If needed, pound thick fillets for even cooking.
- Place fish fillets on the prepared baking sheet, ensuring they are spaced evenly.
- Squeeze fresh lemon juice over the fillets, then drizzle with olive oil for flavor and to help the coating adhere.
- Generously spoon the breadcrumb mixture over each fillet, pressing gently to ensure it adheres well.
- Bake for 12-15 minutes, checking for doneness; the fish should be opaque and flaky.
- Optionally broil for 1-2 minutes for an extra crispy topping.
- Garnish with fresh lemon slices and parsley before serving.
