Description

Ingredients

  • 1.5 lbs of white fish fillets (cod, haddock, tilapia, or swai)
  • 1/2 cup of panko breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of fresh lemon juice
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of dried Italian herbs
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Lemon slices for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it with olive oil.
  2. In a medium-sized bowl, mix panko breadcrumbs, grated Parmesan cheese, chopped fresh parsley, dried Italian herbs, garlic powder, salt, and black pepper.
  3. Rinse fish fillets under cold water and pat dry with paper towels. If needed, pound thick fillets for even cooking.
  4. Place fish fillets on the prepared baking sheet, ensuring they are spaced evenly.
  5. Squeeze fresh lemon juice over the fillets, then drizzle with olive oil for flavor and to help the coating adhere.
  6. Generously spoon the breadcrumb mixture over each fillet, pressing gently to ensure it adheres well.
  7. Bake for 12-15 minutes, checking for doneness; the fish should be opaque and flaky.
  8. Optionally broil for 1-2 minutes for an extra crispy topping.
  9. Garnish with fresh lemon slices and parsley before serving.
