Description
Delight in the crunchy, golden coating of crispy baked cod, served with a burst of lemon juice for a refreshing flavor.
Ingredients
- 4 cod fillets (approximately 1.5 pounds total)
- Salt and pepper to taste
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, finely chopped
- Zest and juice of 1 lemon
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 2 tablespoons olive oil
- Cooking spray or extra olive oil for greasing
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Pat the cod fillets dry with paper towels and season them with salt and pepper.
- In a shallow bowl, mix together panko breadcrumbs, grated Parmesan, chopped parsley, lemon zest, garlic powder, onion powder, and paprika.
- Drizzle olive oil over the breadcrumb mixture and toss to combine.
- Press each cod fillet into the breadcrumb mixture, coating all sides thoroughly.
- Place the coated fillets on the prepared baking sheet with space between each fillet.
- Bake for 15-20 minutes, or until the coating is golden brown and the cod flakes easily with a fork.
- Remove from the oven and squeeze fresh lemon juice over the top before serving.
Notes
For extra crunch, consider using the broiler function for a minute or two at the end of cooking. Serve with fresh veggies or a light salad.
