Ingredients

  • 1 medium lemon
  • 2 tablespoon (30 ml) s baking powder
  • 1 tablespoon (15 ml) plus 1 teaspoon (5 ml) lemon pepper seasoning
  • 1 teaspoon (5 ml) garlic powder
  • 1 teaspoon (5 ml) onion powder
  • 1 teaspoon (5 ml) smoked paprika
  • 1 teaspoon (5 ml) kosher salt (if using no-salt lemon pepper)
  • 4 pounds (1.81 kg) party chicken wings (36 to 44 separated pieces)


Instructions

  1. Position two oven racks so that they divide the oven into thirds, and preheat the oven to 425℉. Cover two baking sheets with aluminum foil and place a wire rack on each one. Lightly coat the wire racks with cooking spray.
  2. Grate the zest of 1 medium lemon until you have 2 teaspoons and transfer it to a large mixing bowl. Add baking powder, lemon pepper seasoning, garlic powder, onion powder, and smoked paprika. If your lemon pepper seasoning lacks salt, include kosher salt. Whisk everything together to combine.
  3. Use paper towels to dry the chicken wings thoroughly. Add them to the bowl with the spice blend and mix until the wings are evenly coated. Place the wings on the prepared baking sheets, ensuring there is about a 1/2-inch gap between each piece. Cook in the oven, turning every 20 minutes, until they are golden, crispy, and fully cooked, which should take around 35 to 40 minutes. Serve the wings hot with your preferred dipping sauce.
