Ingredients
- – 2 medium sweet potatoes, cut into wedges (500g)
- – 1 1/2 tbsp olive oil or avocado oil (22.5 ml)
- – 2 tsp nutritional yeast (6 g)
- – 1 tsp garlic powder (2.5 g)
- – 1 tsp smoked paprika (2.5 g)
- – 1/2 tsp salt, plus more to taste (2.5 g)
- – 1/2 tsp black pepper (1.25 g)
- – Minced fresh parsley or cilantro, for garnish
- – 1/2 cup vegan mayo (120 ml)
- – 1 tbsp gochujang paste (15 ml)
- – 1 tbsp rice vinegar (15 ml)
- – 1 tsp agave or cane sugar (5 g)
Instructions
- Warm up the air fryer to 375°F for 5 minutes.
- Place the sweet potato wedges into a big mixing bowl. Pour in the oil, salt, nutritional yeast, garlic powder, smoked paprika, salt, and pepper. Toss them gently to coat evenly.
- Arrange the sweet potatoes in the air fryer basket in a single layer, allowing them to touch but not overlap.
- Cook in the air fryer at 375°F for 10 minutes. Test the potatoes for doneness; they should be tender when pierced with a fork and have crispy edges. If needed, continue cooking for an additional 2-5 minutes until they reach the desired texture. Note: The cooking duration may vary based on how thick or thin the wedges are cut and your preferred level of crispiness.
- Adjust the seasoning of the sweet potatoes with salt and pepper to your taste. Garnish with chopped fresh parsley or cilantro and enjoy while hot! Pair with gochujang aioli (recipe below) or your favorite ketchup.
