Ingredients
- – 14 oz (400g) salmon, canned sockeye salmon (4 cans) or freshly cooked wild salmon
- – 1 cup (240ml) Panko crumbs, regular or gluten-free Panko
- – 2 large eggs
- – ½ cup (50g) beef bacon, grated
- – 1 clove garlic, minced
- – ½ cup (50g) green onions, sliced
- – ½ cup (75g) red bell pepper, finely chopped
- – 1 tablespoon (15 ml) lemon zest
- – 1 tablespoon (15 ml) parsley, dried
- – 1 tablespoon (15 ml) dill, dried
- – 1 tablespoon (15 ml) Dijon mustard
- – 3 tablespoons (45 ml) mayonnaise
- – ½ cup (120ml) mayonnaise, low fat, vegenaise, or regular
- – 2 tablespoons (30 ml) lemon juice
- – 1 teaspoon (5 ml) lemon zest
- – 1 clove garlic, finely minced
- – salt and pepper, to taste
- – 1 tablespoon (15 ml) parsley, finely chopped
Instructions
- Drain the canned salmon thoroughly if using; if using fresh or leftover salmon, shred it with two forks. For raw salmon, remove the skin and bones, then blend in a food processor until finely minced.
- Combine all the ingredients for the salmon patties in a large mixing bowl and mix well.
- Use a half-cup measure to shape the mixture, pressing it firmly into the cup before releasing it onto a baking sheet lined with parchment paper. Gently flatten the mixture to form patties approximately ¾ inch thick and 2 ½ inches wide.
- Refrigerate the patties for a minimum of 20 minutes; this step is crucial to help them maintain their shape in the air fryer. If pressed for time, you can place them in the freezer briefly.
- Lightly coat the air fryer basket with oil and preheat the air fryer to 390°F for 3 minutes.
- Brush one side of each patty with olive or avocado oil and place them, oil-side down, into the air fryer. Then, brush the tops with oil. Ensure the basket isn’t overcrowded to allow hot air to circulate and crisp the patties.
- Cook in the air fryer at 390°F for 8–10 minutes. Use a meat thermometer to ensure the internal temperature reaches 145°F. Carefully transfer the patties to a serving plate using a silicone spatula to avoid damaging the air fryer basket. There’s no need to flip them halfway through as the circulating air crisps both sides.
- Mix all the sauce ingredients in a small bowl. Serve the sauce alongside the salmon patties for drizzling or dipping.

- For a gluten-free option, use gluten-free Panko crumbs in the salmon patties mixture.
