Ingredients
- 2 small potatoes (about 225g each), scrubbed with peels on
- 1 tablespoon (15 ml) vegetable oil
- 3/4 teaspoon (4 ml) salt
- Freshly ground black pepper, optional

- Using a mandoline, cut the potatoes into extremely thin circles, about 1/16-inch thick. Transfer them to a large bowl and cover with cold water.
- Stir the potato slices around, then pour out the water. Repeat rinsing until the water is clear, which helps eliminate starch for crispier chips.
- Lay the potato slices on a layer of paper towels or clean kitchen cloths and gently pat them dry. Make sure the bowl is dry as well.
- Put the dried potato slices back into the dry bowl. Drizzle with oil, sprinkle with salt, and add freshly ground black pepper if you like. Mix thoroughly so each slice is well-coated.
- Set your air fryer to preheat at 325°F. Arrange the potato slices in a single layer at the bottom of the air fryer basket, ensuring no more than two layers overlap.
- Air fry the slices for 20 minutes until the edges turn dark golden and they become crisp, using tongs to turn them every 5 to 7 minutes for even cooking. Remove any chips that are done early to a plate and continue with the rest. For two potatoes, I typically complete four total batches.
