Description

A delightful and healthy meal featuring flaky cod coated with a crunchy, cheesy Parmesan crust, perfect for busy nights.


Ingredients

  • 4 cod fillets (about 6 oz / 170g each), fresh or thawed
  • 1 cup (100g) finely grated Parmesan cheese
  • ½ cup (50g) panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • Olive oil spray (or melted butter for brushing)
  • Lemon wedges for serving


Instructions

  1. Preheat the air fryer to 400°F (205°C) for 5 minutes.
  2. Combine Parmesan, panko breadcrumbs, garlic powder, dried Italian herbs, salt, and pepper in a shallow bowl.
  3. Pat the cod fillets dry with paper towels; season with salt and pepper.
  4. Press each fillet into the Parmesan-panko mixture, coating both sides well.
  5. Lightly spray both sides of the coated fillets with olive oil spray.
  6. Place fillets in the air fryer basket in a single layer.
  7. Cook for 5-6 minutes, then flip and cook another 5-6 minutes until the crust is golden.
  8. Check for doneness (internal temperature should reach 145°F / 63°C).
  9. Serve immediately with fresh lemon juice squeezed over the fillets.

Notes

For a thicker crust, consider double-coating the fillets. Experiment with spices for variations.
