- 1/2 Cup All purpose flour (60 g)
- 1/4 Cup Grated Parmesan cheese (25 g)
- 1 Cup Panko bread crumbs (100 g)
- Vegetable oil spray*
- 2 tsp Chopped parsley/dill (10 ml)
Instructions
- Dry off the cod fillets thoroughly to eliminate any surface moisture.
- Rub the garlic powder and lemon pepper seasoning generously over all sides of the fish.
- Set up three separate shallow dishes: one with combined panko and Parmesan cheese stirred together, another with a beaten egg until smooth, and the last one with flour.
- Start by lightly coating the fish fillet in flour, shaking off any surplus.
- Next, immerse the fillet in the egg, ensuring it’s completely covered.
- Finally, press the fillet into the breadcrumb and cheese mixture, patting it down so the coating adheres well.
- Apply a light mist of oil to the air fryer basket, place the fillets inside, spray with oil again, and cook at 400°F (200°C) for 10 to 12 minutes, flipping halfway to ensure even cooking.
- Adorn with chopped parsley if desired, and serve while hot. If not serving immediately, place on a cooling rack to maintain crispness.
