  • 4 Pieces of Cod Fillets (680 g)
  • 2 tsp Lemon pepper seasoning (10 ml)
  • 1/2 tsp Granulated garlic/garlic powder (2.5 ml)
  • 1 Egg
  • 1/2 Cup All purpose flour (60 g)
  • 1/4 Cup Grated Parmesan cheese (25 g)
  • 1 Cup Panko bread crumbs (100 g)
  • Vegetable oil spray*
  • 2 tsp Chopped parsley/dill (10 ml)


Instructions

  1. Dry off the cod fillets thoroughly to eliminate any surface moisture.
  2. Rub the garlic powder and lemon pepper seasoning generously over all sides of the fish.
  3. Set up three separate shallow dishes: one with combined panko and Parmesan cheese stirred together, another with a beaten egg until smooth, and the last one with flour.
  4. Start by lightly coating the fish fillet in flour, shaking off any surplus.
  5. Next, immerse the fillet in the egg, ensuring it’s completely covered.
  6. Finally, press the fillet into the breadcrumb and cheese mixture, patting it down so the coating adheres well.
  7. Apply a light mist of oil to the air fryer basket, place the fillets inside, spray with oil again, and cook at 400°F (200°C) for 10 to 12 minutes, flipping halfway to ensure even cooking.
