Ingredients
- – 12 chicken tenders (567 g)
- – 2 large eggs, beaten
- – 1 teaspoon (5 ml) kosher salt
- – black pepper, to taste
- – 1/2 cup (120 ml) seasoned breadcrumbs*
- – 1/2 cup (120 ml) seasoned panko*
- – vegetable oil spray
- – lemon wedges, for serving
Instructions
- Sprinkle the chicken tenders with kosher salt and black pepper.
- Crack the eggs into a shallow dish and whisk them. In another shallow dish, mix together the seasoned breadcrumbs and seasoned panko.
- Coat each piece of chicken in the beaten eggs, then press into the breadcrumb mixture, shaking off any extra crumbs, and arrange them on a big plate or cutting board. Generously coat both sides of the chicken with vegetable oil spray.
- Set the air fryer to a temperature of 400°F.
- Working in batches, cook the chicken for 5 to 6 minutes per side, until they are thoroughly cooked and have a crispy, golden exterior.
- Serve alongside lemon wedges.
