A quick and flavorful dish combining orzo pasta with sautéed shrimp, fresh spinach, and cherry tomatoes in a creamy sauce.
Ingredients
- 8 oz orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add the shrimp to the skillet, seasoning with salt and pepper, and cook until pink (about 2-3 minutes).
- Stir in the cherry tomatoes and spinach, cooking until the spinach wilts.
- Lower the heat and add the heavy cream and Parmesan cheese, stirring until combined.
- Mix in the cooked orzo, ensuring everything is well coated.
- Cook for an additional 2-3 minutes to heat through.
- Serve hot, garnished with fresh basil.
Notes
For added flavor, consider adding red pepper flakes or Italian seasoning. Store leftovers in an airtight container for up to three days.
