Description

A quick and flavorful dish combining orzo pasta with sautéed shrimp, fresh spinach, and cherry tomatoes in a creamy sauce.


Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add the shrimp to the skillet, seasoning with salt and pepper, and cook until pink (about 2-3 minutes).
  4. Stir in the cherry tomatoes and spinach, cooking until the spinach wilts.
  5. Lower the heat and add the heavy cream and Parmesan cheese, stirring until combined.
  6. Mix in the cooked orzo, ensuring everything is well coated.
  7. Cook for an additional 2-3 minutes to heat through.
  8. Serve hot, garnished with fresh basil.

Notes

For added flavor, consider adding red pepper flakes or Italian seasoning. Store leftovers in an airtight container for up to three days.
