Description

Ingredients

  • 1 pound scallops
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt, to taste
  • Pepper, to taste


Instructions

  1. In a skillet, heat olive oil over medium-high heat.
  2. Season the scallops with salt and pepper, then sear them for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté until fragrant.
  4. Add sun-dried tomatoes and fresh spinach, and cook until the spinach wilts.
  5. Pour in the heavy cream and add grated Parmesan cheese, stirring until thickened.
  6. Return the scallops to the skillet, coating them in the sauce.
