Ingredients
- 1 pound scallops
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt, to taste
- Pepper, to taste
Instructions
- In a skillet, heat olive oil over medium-high heat.
- Season the scallops with salt and pepper, then sear them for 2-3 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add minced garlic and sauté until fragrant.
- Add sun-dried tomatoes and fresh spinach, and cook until the spinach wilts.
- Pour in the heavy cream and add grated Parmesan cheese, stirring until thickened.
- Return the scallops to the skillet, coating them in the sauce.
- Serve immediately.
