Description

A rich and creamy pasta dish featuring tender salmon, vibrant cherry tomatoes, and fresh spinach, perfect for a comforting weeknight dinner.


Ingredients

  • 8 oz pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 2 salmon fillets
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Season the salmon with salt and pepper, then add to the skillet. Cook for 4-5 minutes on each side or until cooked through. Remove the salmon and set aside.
  3. In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and spinach, cooking until the spinach wilts.
  4. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
  5. Flake the salmon into large pieces and return it to the skillet, mixing well with the sauce. Add the cooked pasta and toss everything together until well coated.
  6. Season with additional salt and pepper to taste, and garnish with fresh basil before serving.

Notes

For added brightness, consider adding a splash of lemon juice before serving or try substituting chicken for salmon.
