A rich and creamy pasta dish featuring tender salmon, vibrant cherry tomatoes, and fresh spinach, perfect for a comforting weeknight dinner.
Ingredients
- 8 oz pasta (fettuccine or penne)
- 2 tablespoons olive oil
- 2 salmon fillets
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Season the salmon with salt and pepper, then add to the skillet. Cook for 4-5 minutes on each side or until cooked through. Remove the salmon and set aside.
- In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and spinach, cooking until the spinach wilts.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined.
- Flake the salmon into large pieces and return it to the skillet, mixing well with the sauce. Add the cooked pasta and toss everything together until well coated.
- Season with additional salt and pepper to taste, and garnish with fresh basil before serving.
Notes
For added brightness, consider adding a splash of lemon juice before serving or try substituting chicken for salmon.
