Description

Creamy Tuscan salmon features a rich and flavorful sauce made from garlic, cherry tomatoes, and heavy cream, making it a perfect dish for weeknights or special occasions.


Ingredients

  • 2 tablespoons olive oil
  • 4 ounces salmon fillets (four fillets)
  • 1 teaspoon kosher salt (for the salmon, plus more)
  • 1/2 teaspoon black pepper (plus more)
  • 2 tablespoons butter
  • 6 cloves garlic (smashed and minced)
  • 18 ounces cherry tomatoes
  • 1 cup heavy cream
  • 1 1/2 teaspoons kosher salt (for the sauce)
  • 1 teaspoon dried basil
  • 1/4 teaspoon cayenne pepper
  • Black pepper (to taste)
  • 1/2 cup parmesan cheese (shredded)
  • 3-4 ounces spinach (chopped)
  • 1/2 bunch fresh basil (roughly chopped)


Instructions

  1. Begin by heating the skillet over medium-high heat. Pat each salmon fillet dry and season them with salt and pepper.
  2. Add the olive oil to the pan, then place the salmon fillets in the skillet skin side down if applicable. Sear each fillet for 1-3 minutes, until a crust forms. Flip the salmon and cook for another 30 seconds to 1 minute. Remove the salmon from the pan and set aside.
  3. In the same skillet, add the butter. Once melted, toss in the minced garlic, cooking until fragrant.
  4. Add the whole and chopped cherry tomatoes to the skillet, gently cooking until some tomatoes begin to split under the heat.
  5. Pour in the heavy cream and add kosher salt, dried basil, and cayenne pepper. Allow to simmer for 2-4 minutes, stirring gently.
  6. Stir in the parmesan cheese until it melts and the sauce becomes creamy. Add the chopped spinach and cook until it wilts.
  7. Finally, stir in the fresh basil, then return the salmon to the pan, letting it heat through.
  8. Serve this dish over pasta, roasted potatoes, or rice for a complete meal.

Notes

Adjust seasonings to taste. Pair with a side of roasted vegetables or a garden salad.
