Description

A comforting dish that combines tender pasta, succulent salmon, and a rich creamy sauce, perfect for busy weeknights.


Ingredients

  • 8 oz pasta (penne or fusilli preferred)
  • 1 tablespoon olive oil
  • 2 salmon fillets
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Season the salmon with salt and pepper, and then place it in the skillet.
  4. Cook the salmon for about 4-5 minutes per side until cooked through.
  5. Remove the salmon from the skillet and flake it into pieces.
  6. In the same skillet, add minced garlic and sauté for 1 minute.
  7. Add the spinach and halved cherry tomatoes, cooking until the spinach wilts and the tomatoes soften.
  8. Pour in the heavy cream, stirring to combine.
  9. Add the cooked pasta and flaked salmon to the skillet. Toss everything together until heated through.
  10. Serve with Parmesan cheese, if desired.
