Ingredients
- 8 oz pasta (penne or fusilli preferred)
- 1 tablespoon olive oil
- 2 salmon fillets
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 clove garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Season the salmon with salt and pepper, and then place it in the skillet.
- Cook the salmon for about 4-5 minutes per side until cooked through.
- Remove the salmon from the skillet and flake it into pieces.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add the spinach and halved cherry tomatoes, cooking until the spinach wilts and the tomatoes soften.
- Pour in the heavy cream, stirring to combine.
- Add the cooked pasta and flaked salmon to the skillet. Toss everything together until heated through.
- Serve with Parmesan cheese, if desired.
