Description

A quick and delicious creamy salmon pasta dish that combines rich flavors with fresh ingredients for a satisfying weeknight meal.


Ingredients

  • 8 oz fettuccine pasta
  • 2 salmon fillets (about 6 oz each)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • 1/4 cup fresh dill or parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste


Instructions

  1. Cook the fettuccine in salted boiling water until al dente; then drain and set aside.
  2. In a large skillet over medium heat, add the extra virgin olive oil. Cook the salmon fillets for about 5-6 minutes per side until golden brown. Remove salmon from skillet and flake into bite-sized pieces.
  3. In the same skillet, sauté the minced garlic until fragrant (about 30 seconds).
  4. Add the heavy cream and let it simmer gently. Stir in the lemon juice and grated parmesan cheese, mixing until well combined. Season with salt and pepper as needed.
  5. Toss the cooked fettuccine and flaked salmon into the skillet, ensuring they mix well with the sauce.
  6. Before serving, sprinkle with fresh dill or parsley for an extra burst of flavor.

Use fresh lemon juice for the best flavor and consider adding vegetables like spinach or cherry tomatoes for added nutrients.
