Ingredients
- 8 oz gnocchi
- 2 fillets of salmon
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 cup spinach
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
- Lemon zest (optional)
Instructions
- Cook the gnocchi according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper, then cook in the skillet for about 4-5 minutes on each side until cooked through. Remove from the skillet and flake into pieces.
- In the same skillet, add minced garlic and sauté until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in the spinach and cook until wilted.
- Add the grated Parmesan cheese and mix until combined.
- Toss in the cooked gnocchi and salmon pieces, stirring gently to coat everything in the sauce.
- Adjust seasoning with salt and pepper, and add lemon zest if desired.

For a thicker sauce, blend in extra Parmesan cheese. Sprinkle with additional lemon zest for garnish.
