A delightful blend of salmon, cream, garlic, and spinach creates a comforting meal that’s easy to prepare.
Ingredients
- 4 pieces of salmon fillets (about 6 oz each)
- Salt and black pepper to taste
- 2 tablespoons of olive oil
- 3 cloves of garlic (minced)
- 1 small onion (finely chopped)
- 1 cup of heavy cream
- 0.5 cup of chicken broth
- 0.5 cup of Parmesan cheese (grated)
- 2 cups of fresh spinach (roughly chopped)
- 0.5 cup of sun-dried tomatoes (chopped)
- Optional: fresh lemon juice for serving
- Optional: fresh parsley (chopped, for garnish)
Instructions
- Season salmon fillets with salt and pepper on both sides.
- Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down and cook for 4 to 5 minutes. Flip and cook for another 3 to 4 minutes. Remove and set aside.
- In the same skillet, sauté garlic and onion until softened.
- Pour in the heavy cream and chicken broth. Stir and let simmer until slightly thickened.
- Add the grated Parmesan cheese and stir until smooth.
- Fold in the chopped spinach and sun-dried tomatoes, cooking until the spinach wilts.
- Return the salmon to the skillet. Spoon the sauce over each fillet. Let heat through for another minute.
- Garnish with parsley and a squeeze of fresh lemon juice if desired. Serve warm.
Notes
Use fresh spinach for better texture and flavor. High-quality sun-dried tomatoes add moisture and taste.
