Description

A delightful blend of salmon, cream, garlic, and spinach creates a comforting meal that’s easy to prepare.

Ingredients

  • 4 pieces of salmon fillets (about 6 oz each)
  • Salt and black pepper to taste
  • 2 tablespoons of olive oil
  • 3 cloves of garlic (minced)
  • 1 small onion (finely chopped)
  • 1 cup of heavy cream
  • 0.5 cup of chicken broth
  • 0.5 cup of Parmesan cheese (grated)
  • 2 cups of fresh spinach (roughly chopped)
  • 0.5 cup of sun-dried tomatoes (chopped)
  • Optional: fresh lemon juice for serving
  • Optional: fresh parsley (chopped, for garnish)

Instructions

  1. Season salmon fillets with salt and pepper on both sides.
  2. Heat olive oil in a skillet over medium-high heat. Place salmon skin-side down and cook for 4 to 5 minutes. Flip and cook for another 3 to 4 minutes. Remove and set aside.
  3. In the same skillet, sauté garlic and onion until softened.
  4. Pour in the heavy cream and chicken broth. Stir and let simmer until slightly thickened.
  5. Add the grated Parmesan cheese and stir until smooth.
  6. Fold in the chopped spinach and sun-dried tomatoes, cooking until the spinach wilts.
  7. Return the salmon to the skillet. Spoon the sauce over each fillet. Let heat through for another minute.
  8. Garnish with parsley and a squeeze of fresh lemon juice if desired. Serve warm.

Notes

Use fresh spinach for better texture and flavor. High-quality sun-dried tomatoes add moisture and taste.
