Ingredients

  • 12 oz pasta (fettuccine, spaghetti, or penne)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 ½ cups heavy cream
  • 1 cup pasta water (reserved from cooking)
  • ½ cup grated Parmesan cheese
  • Zest and juice of 2 lemons
  • Salt and pepper (to taste)
  • Chopped fresh parsley (for garnish)
  • Crushed red pepper flakes (optional)
  • Extra Parmesan cheese (for serving)
  • Lemon slices (for serving)


Instructions

  1. Boil the pasta in salted water until it reaches al dente. Save 1 cup of the pasta water, then drain the pasta.
  2. In a skillet over medium heat, add olive oil. Once hot, sauté the minced garlic until fragrant. Pour in the heavy cream and let it bubble gently. Stir in the lemon zest and juice. Season with salt, pepper, and red pepper flakes if desired.
  3. Toss the drained pasta into the skillet with the sauce. Use the reserved pasta water to adjust the texture as needed. Finally, stir in the grated Parmesan cheese until it melts and blends smoothly.
  4. Serve the pasta hot, garnished with fresh parsley, additional Parmesan, and lemon slices for an extra touch of brightness.

Notes

Consider adding fresh herbs like basil or thyme for an aromatic touch. For a lighter version, use half-and-half instead of heavy cream.
