Description

A delightful creamy pasta dish featuring rich salmon, tangy feta, and fresh veggies, perfect for busy weeknights or special gatherings.


Ingredients

  • 8 oz pasta of choice
  • 8 oz salmon fillets
  • 4 oz feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach
  • Salt and pepper, to taste
  • Fresh basil, for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add salmon fillets and cook until flaky, about 4-5 minutes on each side. Remove and flake the salmon.
  5. In the same skillet, add cherry tomatoes and spinach, cooking until spinach wilts.
  6. Lower the heat and add feta cheese, stirring until it melts and combines with the vegetables.
  7. Toss in the cooked pasta and flaked salmon, mixing gently to combine.
  8. Season with salt and pepper to taste.
  9. Serve warm, garnished with fresh basil.

Notes

For extra flavor, consider seasoning the salmon before cooking and using fresh basil as a garnish.
