Ingredients
- 2 servings pappardelle pasta
- 6 shrimp (peeled and deveined)
- 1/2 tsp Cajun seasoning
- 2 andouille sausages
- 1.5 tbsp butter
- 1.5 tbsp neutral oil
- 1 small onion (diced)
- 4 cloves garlic (sliced)
- 1 1/4 cups heavy cream
- 2 tsp Cajun seasoning
- 1 tsp lemon pepper
- 2 tsp paprika
- 1 tsp chili powder (optional)
- 3 tsp sugar
- 1.5 tsp dried oregano
- 1 tbsp lemon juice
- 1/3 cup grated parmesan
- 1 tbsp butter (for finishing)
- Grated parmesan (for topping)
- Parsley (for garnishing)
Instructions
- Boil the pasta according to the package instructions and reserve about 1/4 cup of the pasta water.
- Season the shrimp with 1/2 teaspoon of Cajun seasoning.
- In a large frying pan, cook the sliced sausage until cooked through. Remove and set aside.
- In the same pan, melt 1/2 tablespoon of butter and 1/2 tablespoon of oil over medium heat. Add shrimp and cook for 2 minutes on each side, then remove.
- Melt 1 tablespoon of butter and 1 tablespoon of oil in the same pan; add onions and garlic, and sauté until translucent.
- Pour in heavy cream and bring to a simmer. Add remaining Cajun seasoning, lemon pepper, paprika, chili powder (if using), sugar, and oregano. Stir until combined.
- Let sauce cook until a gentle boil, stirring occasionally.
- Add reserved pasta water and cooked pasta. Stir to coat, then add lemon juice and stir again.
- Finish by adding remaining butter, shrimp, and sausage back into the pan. Stir for another minute and turn off heat.
- Top with more grated parmesan and garnish with parsley. Serve hot.
Notes
For a spicier kick, consider increasing the Cajun seasoning or adding a pinch of chili powder. Utilize reserved pasta water to adjust sauce consistency as needed.
