Description

Deliciously creamy and flavorful, these Cajun shrimp loaded baked potatoes are a comforting twist on a classic dish, perfect for casual dinners or special gatherings.


Ingredients

  • 4 medium Russet potatoes
  • 1 lb shrimp (peeled and deveined)
  • 1 cup heavy cream
  • 1 cup broccoli (cooked and chopped)
  • 1 cup Parmesan cheese (shredded)
  • 2 tablespoons Cajun seasoning
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash the russet potatoes thoroughly and poke holes in them with a fork.
  3. Place the potatoes on a baking tray and bake for 45-60 minutes.
  4. Heat a skillet over medium heat and add the shrimp, seasoning them with Cajun spice.
  5. Sauté the shrimp for about 2-3 minutes until they turn pink and opaque.
  6. Pour in the heavy cream and stir until combined, then bring to a simmer.
  7. Stir in the cooked and chopped broccoli, then add the Parmesan cheese and melt.
  8. Remove the potatoes from the oven, cut them open, fluff the insides, and top with the shrimp and broccoli mixture.
