Description

A flavorful and easy dish featuring scallops cooked in a creamy Cajun sauce, perfect for weeknight dinners.


Ingredients

  • 1 pound scallops
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon garlic, minced
  • 1/2 cup diced tomatoes
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season scallops with Cajun seasoning and add them to the skillet. Cook until browned and opaque, about 2-3 minutes per side.
  3. Remove scallops from the skillet and set aside.
  4. In the same skillet, add garlic and sauté for about 30 seconds.
  5. Pour in chicken broth and bring to a simmer.
  6. Stir in heavy cream and diced tomatoes, cooking until the sauce thickens, about 5 minutes.
  7. Return scallops to the skillet and coat them in the sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped parsley and serve.
