Ingredients
- 1 pound scallops
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tablespoon garlic, minced
- 1/2 cup diced tomatoes
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season scallops with Cajun seasoning and add them to the skillet. Cook until browned and opaque, about 2-3 minutes per side.
- Remove scallops from the skillet and set aside.
- In the same skillet, add garlic and sauté for about 30 seconds.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream and diced tomatoes, cooking until the sauce thickens, about 5 minutes.
- Return scallops to the skillet and coat them in the sauce.
- Season with salt and pepper to taste.
- Garnish with chopped parsley and serve.
