Description

A delightful creamy pasta dish featuring tender salmon and a vibrant blend of Cajun spices.


Ingredients

  • 3 large salmon filets, cut in half (6 pieces)
  • 1.5 tsp Old Bay seasoning
  • 1.5 tsp salt
  • 2 tsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp chili powder
  • 2 tbsp butter
  • 2 tbsp oil
  • 1/2 onion, diced
  • 1 tsp garlic, minced
  • 6 mini sweet peppers, chopped (or substitute with 2 bell peppers)
  • 2 tbsp tomato paste
  • 2.5 cups heavy cream
  • 1/3 cup reserved pasta water
  • Parmesan cheese (to taste)


Instructions

  1. Cook your pasta according to package instructions, reserving 1/3 cup of the pasta water before draining.
  2. Mix together Old Bay seasoning, salt, paprika, onion powder, garlic powder, black pepper, oregano, and chili powder in a small bowl.
  3. Season the salmon filets with the spice mixture, ensuring an even coating over each piece.
  4. Heat oil and butter in a skillet over medium heat. Sear the salmon for 4-5 minutes on each side until golden brown. Remove the salmon and set aside.
  5. In the same skillet, add diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  6. Stir in chopped mini sweet peppers and tomato paste, cooking for another 2-3 minutes until softened.
  7. Pour in the heavy cream and bring to a gentle simmer.
  8. Adjust the sauce’s thickness by adding reserved pasta water.
  9. Break the cooked salmon into pieces and fold into the creamy sauce.
  10. Toss the cooked pasta into the skillet until well coated.
  11. Serve immediately, garnishing with freshly grated Parmesan cheese.

Notes

Save reserved pasta water to adjust sauce consistency. Fresh herbs like parsley or basil can enhance flavor when served.
