Ingredients
- 2 salmon fillets
- 1 cup jumbo lump crab meat
- 1/4 cup cream cheese, softened
- 1/4 cup breadcrumbs
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the crab meat, cream cheese, breadcrumbs, Dijon mustard, lemon juice, parsley, salt, and pepper in a bowl. Mix well.
- Cut a pocket in the side of each salmon fillet and stuff with the crab mixture.
- Place the stuffed salmon on a baking sheet and drizzle with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
