A refreshing and colorful crab salad featuring tender crab sticks and crisp vegetables, perfect for any occasion.
Ingredients
- 1 lb crab stick
- ½ large English cucumber, julienned
- 1 large carrot, julienned
- ½ cup Japanese mayonnaise (or regular mayonnaise)
- 1 ½ tablespoons lemon juice
- Salt and pepper to taste
- 2 teaspoons sriracha (optional)
Instructions
- In a small bowl, combine the Japanese mayonnaise and lemon juice. Whisk until smooth. For a spicy kick, add sriracha and adjust seasoning with salt and pepper.
- Shred imitation crab stick using your hands or a fork into thin pieces.
- In a large bowl, combine shredded crab stick, julienned carrots, and cucumber. Pour dressing over and gently toss to combine. Serve immediately.
Notes
For best results, prepare the vegetables and crab stick ahead of time but keep the dressing separate until just before serving.
