Description
A refreshing crab salad combining delicate crab sticks with crunchy vegetables and a creamy Japanese mayonnaise dressing, perfect for summer picnics or any casual meal.
Ingredients
- 1 lb crab stick, shredded
- ½ large English cucumber, julienned
- 1 large carrot, julienned
- ½ cup Japanese mayonnaise
- 1 ½ tablespoons lemon juice
- Salt & pepper, to taste
- 2 teaspoons sriracha (optional)
Instructions
- Whisk together the Japanese mayonnaise and lemon juice in a small bowl until smooth.
- Adjust seasoning with salt and pepper to taste. Stir in sriracha if desired.
- Shred the crab stick by hand or with a fork.
- Combine in a large bowl the shredded crab, julienned cucumber, and carrot.
- Toss with the desired amount of dressing until everything is coated.
- Serve immediately or chill before serving.
Notes
Add chopped celery or bell peppers for extra texture. Adjust the amount of mayonnaise based on your creaminess preference.
