Ingredients
- 1 pound shrimp (peeled and deveined)
- 2 cups freshly squeezed lime juice
- 1 cup diced red onion
- 1 cup diced tomatoes
- 1 cup diced cucumber
- 1/2 cup diced jalapeño
- 1/2 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Cook the shrimp in boiling salted water until pink and opaque, about 2-3 minutes.
- Immediately transfer the shrimp to an ice bath to stop the cooking process.
- Once chilled, chop the shrimp into bite-sized pieces.
- In a large bowl, combine the cooked shrimp, lime juice, red onion, tomatoes, cucumber, jalapeño, and cilantro.
- Season with salt and pepper to taste, adjusting to your preference.
- Mix thoroughly and allow to sit for at least 30 minutes to let the flavors meld.
