A refreshing cold shrimp pasta salad perfect for summer gatherings, featuring shrimp, pasta, and a creamy dressing.
Ingredients
- 8 oz pasta (rotini or penne)
- 1 lb shrimp, peeled and deveined
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lemon, juiced and zested
- 2 tbsp fresh dill, chopped
- 1 garlic clove, minced
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/2 cup celery, diced
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a skillet, cook the shrimp over medium heat until pink and opaque, about 2-3 minutes per side. Let cool.
- In a mixing bowl, whisk together mayonnaise, sour cream, lemon juice, lemon zest, dill, and garlic. Season with salt and pepper.
- In a large bowl, combine the cooled pasta, shrimp, cherry tomatoes, red onion, and celery.
- Pour the dressing over the pasta salad and toss to combine.
- Serve chilled. Enjoy at your summer gathering!
Notes
Chilling the mixing bowl and ingredients beforehand can keep the salad cool longer. Letting the salad sit in the refrigerator for about 30 minutes before serving allows the flavors to meld beautifully.
