Description

A delightful dish featuring fresh cod fillets in a robust Creole sauce made with sautéed bell peppers, zesty Cajun seasoning, and savory tomatoes.


Ingredients

  • 4 Fresh cod fillets
  • 2 tablespoons Olive oil
  • 1 cup Bell peppers, chopped
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Celery, chopped
  • 1 can (14.5 oz) Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped bell peppers, onion, and celery. Sauté until softened, about 5 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Add diced tomatoes and tomato paste, mixing well. Pour in chicken broth, blending all ingredients.
  5. Season with Cajun seasoning, salt, and pepper. Simmer for about 10 minutes to develop flavors.
  6. Meanwhile, season cod fillets with salt and pepper. Place the cod in the skillet, nestled in the sauce.
  7. Cover the skillet and cook for about 8 to 10 minutes, or until the cod flakes easily with a fork.
  8. Sprinkle freshly chopped parsley over the dish before serving.
