A delightful dish featuring fresh cod fillets in a robust Creole sauce made with sautéed bell peppers, zesty Cajun seasoning, and savory tomatoes.
Ingredients
- 4 Fresh cod fillets
- 2 tablespoons Olive oil
- 1 cup Bell peppers, chopped
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 cup Celery, chopped
- 1 can (14.5 oz) Diced tomatoes
- 2 tablespoons Tomato paste
- 1 cup Chicken broth
- 1 tablespoon Cajun seasoning
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped bell peppers, onion, and celery. Sauté until softened, about 5 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
- Add diced tomatoes and tomato paste, mixing well. Pour in chicken broth, blending all ingredients.
- Season with Cajun seasoning, salt, and pepper. Simmer for about 10 minutes to develop flavors.
- Meanwhile, season cod fillets with salt and pepper. Place the cod in the skillet, nestled in the sauce.
- Cover the skillet and cook for about 8 to 10 minutes, or until the cod flakes easily with a fork.
- Sprinkle freshly chopped parsley over the dish before serving.
