Description

A comforting and light coconut lime fish soup that combines rich flavors with simplicity, perfect for weeknight dinners.


Ingredients

  • 1 (14 oz) can of coconut milk
  • 2 cups of vegetable or fish stock
  • 1 pound of white fish (like cod or halibut), chopped into small pieces
  • 1 medium onion, diced
  • Juice of fresh lime
  • Fresh herbs for garnish (cilantro or basil)
  • Oil for sautéing


Instructions

  1. In a pot, heat a little oil and sauté the diced onion until translucent.
  2. Add the vegetable or fish stock and bring to a simmer.
  3. Stir in the coconut milk and allow to heat through.
  4. Add the chopped white fish and cook until it is just cooked through, about 5-7 minutes.
  5. Squeeze in fresh lime juice to taste.
  6. Serve hot, garnished with lime wedges and fresh herbs if desired.

Notes

For added heat, consider adding sliced chili peppers or a sprinkle of red pepper flakes while the onion roasts.
