A flavorful dish that combines salmon with coconut milk and curry powder for a nutritious and delicious meal.
Ingredients
- 4 Salmon fillets
- 1 cup Coconut milk
- 2 tablespoons Curry powder
- 1 Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 1 Bell pepper, sliced
- 2 tablespoons Oil (for pan-searing)
- Salt, to taste
- Pepper, to taste
- Rice (for serving)
- Your favorite Vegetables (for serving)
Instructions
- Heat the oil in a pan over medium heat.
- Season the salmon fillets with salt and pepper, then pan-sear them until golden and cooked through. Remove and set aside.
- In the same pan, add the chopped onions, garlic, and ginger. Sauté until fragrant.
- Add the curry powder and stir for a minute.
- Pour in the coconut milk and bring to a simmer.
- Incorporate the bell peppers and any desired vegetables. Cook until softened.
- Return the salmon to the pan and coat with the curry sauce.
- Serve with rice and extra veggies on the side.
Notes
For added spice, include sliced chili peppers or cayenne pepper. Leftovers taste great the next day as flavors meld together.
