Description

A flavorful and vibrant classic Thai street dish featuring rice noodles, chicken or shrimp, and a medley of fresh vegetables.


Ingredients

  • 250g rice noodles
  • 200g chicken or shrimp, diced
  • 1 tablespoon sesame oil
  • 2 garlic cloves, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 egg
  • 250g mixed vegetables (carrots, bell peppers, snow peas)
  • Fresh coriander for garnishing
  • Lime juice for serving


Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and sauté until golden.
  3. Add the chicken or shrimp and cook until fully cooked.
  4. Add the mixed vegetables and cook until tender.
  5. Push the ingredients to one side of the pan, crack the egg on the other side, and scramble it.
  6. Add the rice noodles, soy sauce, fish sauce, and sugar. Mix well to combine all ingredients.
  7. Serve hot, garnished with fresh coriander and lime juice.

Notes

Consider adding toasted sesame seeds for extra texture. Adjust seasonings to balance sweet and savory flavors.
