A flavorful and vibrant classic Thai street dish featuring rice noodles, chicken or shrimp, and a medley of fresh vegetables.
Ingredients
- 250g rice noodles
- 200g chicken or shrimp, diced
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon sugar
- 1 egg
- 250g mixed vegetables (carrots, bell peppers, snow peas)
- Fresh coriander for garnishing
- Lime juice for serving
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic and sauté until golden.
- Add the chicken or shrimp and cook until fully cooked.
- Add the mixed vegetables and cook until tender.
- Push the ingredients to one side of the pan, crack the egg on the other side, and scramble it.
- Add the rice noodles, soy sauce, fish sauce, and sugar. Mix well to combine all ingredients.
- Serve hot, garnished with fresh coriander and lime juice.
Notes
Consider adding toasted sesame seeds for extra texture. Adjust seasonings to balance sweet and savory flavors.
