A refreshing shrimp salad with crisp vegetables and a creamy dressing, perfect for gatherings or family dinners.
Ingredients
- 1 pound shrimp, peeled and deveined
- 1/4 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup bell pepper, diced
- Salt and pepper to taste
- Lettuce leaves for serving
Instructions
- In a large pot, bring water to a boil and add the shrimp. Cook for about 2-3 minutes until the shrimp are pink and opaque. Drain and let cool.
- In a bowl, mix together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Add the cooled shrimp, celery, red onion, and bell pepper to the bowl, stirring until well combined.
- Serve over lettuce leaves or in a sandwich.
Notes
Let the salad sit for at least 15 minutes before serving to allow flavors to blend. Store leftovers in an airtight container and consume within 1-2 days for best freshness.
